Last week on vacation I mostly forgot to snap pictures of my meals, so we are going to skip over that and I’ll take us back to the week before.
Breakfasts included lots of peanut butter (big surprise I know).
Overnight oats just made with some mashed banana, dates, raisins, walnuts, cinnamon and milk tossed together and left in the fridge…overnight. With a bright and fresh fruit salad on the side.
Two waffles, one with dark chocolate peanut butter and the other with white chocolate peanut butter, jelly, and some raspberries and blueberries.
Whole wheat sour dough toast topped with some chunky peanut butter, berry preserves, and lots of fresh fruit on the side. Pineapple is one of, if not my absolute favorite foods.
One meal I did snap last week was concocted by my Uncle Jack and included two perfect over easy eggs, an English muffin with a smear of peanut butter and jelly, half of a slightly hidden banana, and two pieces of bacon.
Lunches, per usual, consisted of lots of leftovers.
A big, colorful salad with steak tips and feta on top. I’m not usually a huge red meat fan, but lately I’ve been digging the steak tips. Not so much on a full piece of steak or ground beef (unless occasionally in burger form). I also have been known to enjoy a filet mignon once in awhile, though not without chuckles in remembrance of the time I called it fillet mignon, without the accent, in Disney World.
Leftover grilled chicken tenders and broccoli with a bit of hot sauce and the greatest macaroni and cheese known to mankind, courtesy of my mom.
A beautiful panini that was filled and pressed with Perdue grilled chicken strips, pepper jack cheese, zucchini, red pepper, and baby spinach with some delicious strawberries and blueberries on the side. Skinny pop popcorn is not pictured but very much enjoyed.
Leftovers from Bertuccis in a week that included too much dining out due to our floor being out of service during kitchen construction. I tossed in some extra veggies, including zucchini and baby spinach as well as some red beans and cheese to make it interesting and healthier.
A fajita bowl with brown and wild rice, more grilled chicken strips, red beans, zucchini, red pepper, and carrots topped with cheese. Very filling and quite good.
As I mentioned, dinners were sporadic due to having to go out to eat. I am not against this, but from a health standpoint, I know that I can often create healthier and more palatable dishes that don’t include consuming five servings. I’m one of those people who finds it difficult to leave food behind on the plate, it’s a waste!

My favorite dish from Border Cafe is a blackened salmon fillet on a bed of spinach, red pepper, corn, and black beans. Enjoyed with too many hot and homemade tortilla chips. It’s dark in the restaurant, which leads to a dark picture.
My original Bertuccis meal was the rigatoni abuzzi, which includes pasta, sausage, and peppers and is one of the lower calorie items on the menu. When I say lower, I don’t mean it’s necessarily altogether healthy, but when divided in half, it’s not half bad! Terrible pun, I know. I’m only ever at Bertuccis for the rolls anyways! I guess I forgot a picture…
Thursday night, my cousin Erin and I journeyed on a moment of spontaneity to the One Direction concert. Good music and good company. It was kind of funny, but all sorts of awesome. Dinner was just a quick piece of pizza and skinny pop popcorn when I got home. No time for pictures of food, but here’s one from the show.
The night before the big trip, I got kicked out of the gym. Okay it was closing time and I hadn’t realized because I was in a good groove. Turned out to be good timing because my brother called as I was walking out to see what I wanted for dinner. He brought me home a Greek salad with chicken that was humongous and delicious, especially the homemade pita bread on the side. Later that night, I went out to celebrate my friend since kindergarten, Andrea’s birthday before getting ice cream with my friend Lauren. I enjoyed my favorite peanut butter and Oreo before going home to pack for my vacation!
Another great week of eating enjoyed! After this restaurant overload and vacation eating, however, I am so ready for this week to be a bit healthier. Once this kitchen is ready, I’ll get back into my cooking mode.
On Thursday I think I might discuss my eating and exercising strategies when it comes to vacations. I’ve been able to enjoy quite a few this summer, so I have lots of thoughts to share!
